Buckwheat mini pancakes with smoked salmon and caviar
250 ml

  1. Put yeast and sugar in a bowl and stir in warm milk. In a large bowl, sift both flour, in the center make a groove and add the egg yolks and milk mixture. Stir well, cover and put in a warm place for 45 minutes.
  2. Melt the butter and add to the dough. Put egg whites in a dry bowl and whisk in a hard foam. Gradually mix a third of the protein mixture in the dough.
  3. Preheat 1 tablespoon vegetable oil in a frying pan over medium heat. Spread 0.5 tablespoons of dough for each pancake. Fry for 1 minute, then turn over and fry for another 30 seconds until golden brown. Make about 40 pancakes, adding oil if necessary. Refrigerate.
  4. For each pancake, put a piece of fish, 1 teaspoon of fresh cream and 0.25 teaspoon of caviar. Decorate with dill sprigs.
